There are some basic hand-outs that can be used to monitor research progress. Feel free to use research sheets for the students to take notes on. You can also include possible questions they can research to give them some ideas. How you want the students to document the sources is up to you. I use a simple format that gets them used to the idea of giving credit. Nothing like MLA, but more of a "Author, Title, Web Address" format.
